VTK 9.1.0 prerelease works, which is great! Hopefully once it lands in full form and in Conda we can remove some pins... Ready for review/merge from my end |

--prebuild of VTK 9.1.0The disadvantage is that in
--prewe no longer testmayavi, but that seems appropriate given that Mayavi isn't being updated very actively anymore, and we're hopefully dropping support for it soon.
